Cucina Bianca on the Ligurian Alps

We recommend a night stay in a local agriturismo, so the day after you can better enjoy the beautiful itinerary without being under time pressure.

After a genuine mountain breakfast you will meet our tour guide for a hike through beautiful chestnut and beech forests, passing near the area of the Arroscia Waterfalls, which are among the highest and most beautiful in Liguria. The waterfalls, falling from a wall of flyschoid rock more than 20 m high, from little pools of cool transparent water are very pleasant in summer and are really spectacular in winter, when the water turns into stalactites and looks like hundreds of ice swords hanging from the rocks.

After a relaxing stop where you can enjoy a swim (if it’s summer season) you’ll visit the “ghost” village of Poilarocca, a characteristic stone village which is no longer inhabited but is very well preserved as if somehow it had never abandoned.

You’ll be amazed by the landscape changes dominated by pasturelands with beautiful Alpine flowering in late spring and summer and summer and coniferous woodlands with Scots pine and larch.

The day tour will end meeting the owners of an agriturismo in Mendatica village and dining with local specialities. You’ll taste the famous “cucina bianca” (white cuisine), the local mountain cuisine called “white” because of the dominant colour of many of its main specialities which include kinds of pasta, pies and vegetables dishes containing cheese, beans, corgette flowers, eggs, leeks, turnips, mushrooms, etc… It is a “white” cuisine also in comparison to the coast and the first hinterland, where tomatoes are so widespread and the colour “red” is so present. Furthermore, you’ll taste several kinds of fresh and mature mountain cheese coming from the sheep “pecora brigasca” and the goat “capra bionda di Mendatica”. You’ll be surprised how simple it is to eat great dishes made with simple and poor ingredients.
