Today, I’d like to share with you my polpettone genovese recipe. A classic among the italian recipes!
1 kg green beans,
20 gr dried mushrooms,
100 gr grated parmigiano cheese,
200 gr ricotta,
a teaspoon of marjoram,
salt and pepper,
First off all boil string beans and the potatoes in salty water.
Gently fry chopped onion and mushrooms in a frying pan (if you use dried mushrooms, soak them in warm water for about 30 minutes to soften them).
Meanwhile finely chop the string beans, peel the potatoes and mash them.
Then, add the chopped string beans and the mashed potatoes in the frying pan. Salt to taste and cook for a couple of minutes.
In a large bowl, mix eggs, grated parmigiano cheese, ricotta, marjoram, the potatoes and the string beans and salt and pepper.
Then, take a greased baking pan and strew over it some grated bread. Pour the mixture into the baking pan and top with a layer of grated bread. Then, go all around the cake to form shapes with the fork teeth (like a tart).
Finally, sprinkle with a little olive oil and bake in preheated oven at 180 °C for 50 minutes.
I love this dish, when I prepare it I do more to save for lunch the next day. In fact, polpettone is best when made from a day to another. You can eat it cold, it is really good.
