Stuffed Anchovies – Acciughe ripiene

Some weeks ago, we published the Recipe Fresh Marinated Anchovies, but some of you have wrote asking other alternative recipes that have as basic ingredient the Anchovies.

So, today I would like to propose to you the Stuffed Anchovies recipe.

Ingredients for 4 people:

600 gr. Anchovies,
2 eggs,
50 gr.parmigiano,
50 gr. breadcrumbs,
1 garlic clove,
parsley,
oregano,
salt

Preparation:
Carefully clean the anchovies, remove the entrails, the head and the fishbones, then rinse inside and out under cold running water and dry on kitchen paper.

Filling preparation:

Mince some anchovies and put them in a bowl. Then, add some chopped parsley, oregano, eggs, parmigiano, breadcrumbs and salt and stir everything together.

At this point place the anchovies in a greased baking pan and fill with the mixture previously prepared.Then, sprinkle them with some breadcrumbs and little oil.

Bake in a preheated oven at 180 degrees for about 20 minutes.
